Our signature wine: these bottles are produced using hundred-year-old vines, for a strong and deeply flavored wine in the great tradition of Châteauneuf-du-Pape.
COMPOSITION
80% Grenache (vine age: 80 years)
10% Syrah (vine age: 10 years)
10% Mourvèdre/Cinsault
TERROIR
5 hectares, in a smalt soil located in Pied Redon, Croix de Bois and Valori. The Grenache is grown on in red pebbly soil, with red slate and sandy soil under layers
HARVEST
Small-parcel hand harvest with limited fruit thanks to rigorous pruning beforehand
FERMENTATION
Destemming and reassembly on the Syrah; the other varietals are fermented whole with naturally occurring yeasts in cement vats for 3 weeks.
AGING
14 months in aged barrels for 2/3 of the production; 1/3 in tanks
