Cuvée Philosophale

To celebrate his 40th year in winemaking, Daniel created the Philosophale wine. This bottle  takes its name from Dom Pernety and his followers’ search for the Philosopher’s Stone, and emulates the Stone’s rarity by its limited quantities.

COMPOSITION

75% Grenache (vine age: 80 years)

25% Syrah (vine age: 15 years)

TERROIR

4 hectares, located in the southwest of the appellation. 
The Grenache and Syrah are grown in red pebbly soil, with red slate and sandy soil under layers 

HARVEST

Hand-harvested and sorted

FERMENTATION

3 weeks in temperature- regulated cement tanks ; destemming and reassembly on the Syrah

AGING

Aged 12 months in the best barrels from old wines, then 12 months in large 600L capacity oak barrels

PRODUCTION

29 hectolitres/ha 

1200 bottles

TASTING
NOTES

Notable for the distinctive taste of its Syrah, and marked by an exceptional maturity, this wine shows notes of truffles and black olives, and is best enjoyed after 10-15 years in cellar.
